Preheating and Prep
- Preheat the oven to 500 degrees Fahrenheit (260 degrees Celsius) with a rack in the upper third of the oven. If you’re using a baking stone or baking steel, place it on the upper rack.
- Prepare pizza dough through its first proofing. If using store-bought dough, let it rest at room temperature for about 30 minutes before stretching.
- Divide the dough in half and shape each half into a 12-inch circle or rectangle on a lightly floured surface.
Assembling the Pizza
- Brush the shaped pizza dough generously with garlic-infused olive oil.
- Spread pizza sauce evenly over the two pizzas, leaving about 1 inch bare around the edges. Evenly distribute the spinach on top of the sauce. Layer some fresh spinach between the pizza sauce and mozzarella.
- Evenly distribute the mozzarella cheese on top of the spinach. Top the pizzas with artichoke, bell pepper, red onion, tomatoes, olives, and almonds (if using). Fresh bell pepper becomes nice and tender during the pizza’s short stint in a high-heat oven.
Baking and Serving
- Bake pizzas individually on the top rack until the crust is golden and the cheese is golden and bubbly, about 10 to 12 minutes. Keep an eye on it.
- Transfer pizzas to a cutting board and sprinkle with fresh basil, red pepper flakes, and Parmesan, if using. Slice and serve immediately!
