Vegan Potato and Bean Quesadillas

Ingredients
  

  • 1 cup diced russet potatoes (about 1/2-inch pieces)
  • 1 cup chopped kale or greens (optional)
  • 5 large flour tortillas
  • 15 oz can vegan refried beans
  • 1/4 cup salsa of your choice (strained if watery)
  • 1 cup shredded vegan cheese
  • 1 tbsp olive oil or avocado oil, for cooking

Method
 

  1. Boil diced potatoes in a small pot of water for about 8 minutes until fork-tender.
  2. If using kale or greens, add them to the pot during the last 1–2 minutes of cooking. Remove and set aside.
  3. Drain potatoes and mash in a large bowl using a masher or fork. Leave a few small lumps if desired.
  4. Add refried beans, strained salsa, kale (if using), and vegan cheese to the mashed potatoes. Mix well.
  5. Heat a non-stick skillet over medium-low and lightly coat with oil.
  6. Spread filling over half of a tortilla (about 1/4-inch thick). Fold tortilla over the filling to form a half-moon.
  7. Place in skillet and cook 3–5 minutes per side until golden and crispy.
  8. Repeat with remaining tortillas and filling. Makes about 5 quesadillas total.
  9. Slice and serve warm with guacamole, salsa, vegan sour cream, or lime wedges.

Notes

Be sure to drain salsa well and mash potatoes thoroughly for a smooth, sturdy filling. Use gluten-free tortillas for a GF version. Spinach or kale adds extra nutrients and color. Choose a vegan cheese that melts well like Violife or Miyoko’s. For added spice, mix in jalapeños or chili powder.
