Ultimate Slow Cooker Lasagna Soup

Ingredients
  

  • 2 tsp olive oil (if using ground turkey)
  • 1 lb lean ground beef or Italian sausage (or turkey)
  • 1 small yellow onion, diced
  • 5 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 2 cups marinara sauce
  • 15 oz can diced tomatoes
  • 1 tsp dried basil
  • 1 tsp dried parsley
  • ½ tsp onion powder
  • ½ tsp oregano
  • ¼ tsp dried rosemary
  • ¼ tsp red pepper flakes (optional)
  • 8 lasagna noodles, broken into bite-sized pieces
  • 1 tsp balsamic vinegar
  • ½ cup freshly grated parmesan
  • salt and pepper, to taste
  • 1 cup grated mozzarella cheese
  • ½ cup ricotta cheese
  • optional garnish: chopped fresh parsley

Equipment

Method
 

  1. In a skillet over medium heat, heat olive oil (if using). Brown ground meat until fully cooked, breaking it up with a spoon. Drain excess grease.
  2. Transfer browned meat to slow cooker. Add onion, garlic, broth, marinara, diced tomatoes, basil, parsley, onion powder, oregano, rosemary, and red pepper flakes. Stir to combine.
  3. Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours until flavors develop and onions soften.
  4. With 30–45 minutes left, stir in broken lasagna noodles. Ensure noodles are submerged in liquid. Cover and cook on HIGH until al dente.
  5. Stir in balsamic vinegar and grated parmesan. Season with salt and pepper to taste. Adjust flavor as needed.
  6. Ladle soup into bowls. Top each with a dollop of ricotta and sprinkle with mozzarella. Garnish with parsley and serve hot.

Notes

Use ground turkey or sausage instead of beef. Omit meat for a vegetarian version. Substitute chicken or vegetable broth. Use rotini or penne if you don’t have lasagna noodles. Ricotta can be mixed with cream cheese for extra richness. Add spinach or mushrooms for more veggies.
