Phase 1: Macerate & Combine Your Flavor Base
- If you're using fresh pineapple chunks, begin by combining the pineapple chunks, raw honey (or pure maple syrup), apple cider vinegar, chopped mint leaves, cayenne powder, ground turmeric, grated ginger (if using), and lime juice in a bowl. Macerate this mixture for at least 30 minutes, or ideally overnight, in the refrigerator. This resting period allows the flavors to truly meld and deepen, extracting maximum essence from the pineapple and spices. If you're using pineapple juice, simply whisk all these ingredients (minus the sparkling water, ice, and sliced lime) directly until well combined.
Phase 2: Blend (if using pineapple chunks)
- After the maceration, if you used pineapple chunks, transfer the entire mixture from the bowl into a blender. Blend until completely combined and smooth. This creates the rich, concentrated base of your drink.
Phase 3: Store Your Concentrate
- Carefully pour the concentrated mixture into an airtight bottle or jar. Store this vibrant base in the refrigerator for up to 6 weeks.
Phase 4: Serve & Enjoy
- When you're ready to indulge, simply pour a portion of the concentrate into a glass. Add sparkling water – I recommend starting with 6 ounces and adjusting to your taste for desired dilution and fizz. For ultimate refreshment, serve over plenty of crushed ice. Garnish with fresh lime slices and a sprig of mint.
