Ingredients

  • 1/2 Tablespoon butter
  • 2 ribs celery diced
  • 3-4 large carrots diced
  • 1 clove garlic minced
  • 10 cups chicken stock or broth
  • 1 teaspoon salt to taste
  • ½ teaspoon freshly ground black pepper to taste
  • 1/8 teaspoon dried rosemary or more, to taste (optional, if using fresh herb bouquet garni)
  • 1/8 teaspoon dried thyme (optional, if using fresh herb bouquet garni)
  • 1/8 teaspoon crushed red pepper flakes
  • 1 batch homemade egg noodles or 4 cups dry egg noodles, farfalle or other bite-size pasta
  • 3 cups rotisserie chicken shredded
  • 1 teaspoon better than bouillon chicken flavor (or more, as needed), or chicken bouillon granules
  • Fresh herb bouquet garni (a few sprigs fresh thyme, rosemary, and a handful fresh parsley), tied with kitchen twine

Equipment

  • Large stock pot

Method

Step 1: Sauté the Aromatics
  1. Begin by adding 1/2 Tablespoon of butter to a large stock pot over medium-high heat. Once melted and shimmering, add your diced celery and carrots. Sauté these vibrant vegetables for about 3 minutes, stirring occasionally, until they start to soften and their natural sweetness begins to emerge. Then, add the minced garlic and cook for another 30 seconds. You’ll notice the incredible aroma filling your kitchen – that’s the foundation of great flavor!
Step 2: Infuse the Broth with Fresh Herbs
  1. Pour in the 10 cups of chicken stock. Now for our signature twist: instead of adding dried rosemary and thyme directly, create a fresh herb bouquet garni. Simply tie together a few sprigs of fresh thyme, rosemary, and a handful of fresh parsley with kitchen twine. Submerge this fragrant bundle into the broth. Season the broth with 1/8 teaspoon crushed red pepper flakes, 1 teaspoon salt (definitely TASTE the broth before adding more!), and ½ teaspoon freshly ground black pepper. Taste and adjust. If the broth feels a little flat, add 1 teaspoon of “better than bouillon chicken flavor” or chicken bouillon granules as needed. The fresh herbs will simmer with the broth, slowly releasing their bright, nuanced flavors.
Step 3: Cook the Noodles to Perfection
  1. Bring the broth to a rolling boil. Add your noodles – whether you're using uncooked homemade egg noodles or dry store-bought pasta like farfalle. Cook them just until they are al dente, meaning they still have a slight bite. This is crucial for noodle perfection.
Step 4: Noodle Care – Avoid Mushiness!
  1. If you're using store-bought noodles, be especially cautious not to overcook them! As soon as they are just barely tender, immediately remove the pot from the heat. I can't stress this enough: the noodles will continue to cook even after the pot is off the heat, and you absolutely don’t want them mushy. Perfectly cooked noodles are a hallmark of a great chicken noodle soup.
Step 5: Add Chicken and Final Seasoning
  1. Once the noodles are cooked al dente and the pot is off the heat, carefully remove the fresh herb bouquet garni. Then, add the 3 cups of shredded rotisserie chicken meat to the pot. Give the broth another taste. This is your last chance to add more seasonings if needed – perhaps a little more salt, pepper, or a pinch of those red pepper flakes for a subtle warmth.
Step 6: Serve and Store
  1. Ladle your delicious, homemade chicken noodle soup into bowls and enjoy immediately! For any leftovers, allow the soup to cool completely before transferring it to an airtight container. Store it in the refrigerator for 4-5 days, depending on the freshness of the chicken you used.

Notes

This recipe shines with a fresh herb bouquet garni for vibrant flavor. Cook noodles until al dente to avoid mushiness and ensure proper seasoning by tasting throughout. For storage, refrigerate for 4-5 days. For freezing, separate broth/chicken from noodles to maintain texture.
