Tender Beef Brisket Slow Cooker

Ingredients
  

  • 3.5 lb beef brisket (not corned beef)
  • 1 tbsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 4 cloves garlic, minced
  • 1 onion, sliced
  • 2 cups low-sodium beef broth
  • 3 tbsp soy sauce (or coconut aminos)
  • 0.25 cup ketchup
  • 1 lb baby potatoes
  • 4-5 large carrots, peeled and cut into chunks
  • 1 tbsp arrowroot powder (or cornstarch)
  • 3 tbsp cold water (for slurry)

  • Large skillet (optional for searing)

Method
 

  1. Pat brisket dry with paper towels. Season with salt, pepper, garlic powder, onion powder, and oregano.
  2. Optional: Sear the brisket on both sides in a hot skillet with oil for 3–4 minutes per side.
  3. Place sliced onions and minced garlic in the bottom of a 6-quart or larger slow cooker.
  4. Lay the brisket on top of the onions and garlic.
  5. In a bowl, whisk together beef broth, soy sauce, and ketchup. Pour over the brisket.
  6. Cover and cook on LOW for 8 hours or HIGH for 4–5 hours.
  7. 2–3 hours before done (LOW) or 1–1.5 hours (HIGH), add baby potatoes and carrots around the brisket.
  8. Remove brisket to a cutting board. Tent with foil and let rest 15–20 minutes before slicing against the grain.
  9. In a small bowl, whisk arrowroot powder and cold water into a slurry. Stir into hot liquid in slow cooker. Cook on HIGH for 15–20 minutes to thicken.
  10. Serve sliced or shredded brisket with gravy and vegetables.

Notes

Use a flat cut brisket for leaner slices or a point cut for more marbling. Searing adds extra depth of flavor. Add parsnips or sweet potatoes with the carrots. Coconut aminos are a great gluten-free swap for soy sauce.
