Ingredients
  

Roasted Sweet Potatoes
  • 1 pound sweet potato, peeled and cubed
  • 2 tablespoons olive oil
  • salt to taste
  • 1 pinch pepper
  • 1 pinch paprika or oregano
  • 1 pinch garlic powder
Ground Meat Mixture
  • 1 pound lean ground beef or turkey
  • 0.5 yellow onion, finely diced
  • 3 cloves garlic, minced
  • salt to taste
  • 0.25 teaspoon pepper
  • 0.5 teaspoon chili powder or paprika
Fresh Veggies
  • 1 tomato, sliced
  • 0.25 cucumber, cut in half
  • 1 slice onion one ring
  • 1 jalapeño, seeded
  • salt to taste
Dill-Yogurt Sauce
  • 0.33 cup Greek yogurt or sour cream
  • fresh chopped dill
  • 1 clove garlic, minced
Assemble & Toppings
  • 0.25 cup cheddar cheese, grated
  • Romaine lettuce, thinly sliced
  • guacamole optional
  • sour cream or spicy mayo optional

Method
 

Prepare the Sweet Potatoes
  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Toss cubed sweet potatoes with olive oil, salt, pepper, paprika, and garlic powder in a bowl.
  3. Spread in a single layer and bake for 30 to 40 minutes, flipping halfway through, until tender and caramelized.
Cook the Ground Meat
  1. In a large skillet over medium-high heat, brown the ground meat, breaking it into small chunks with a wooden spoon.
  2. Cook until liquid has evaporated and meat browns; reduce heat and add onions, garlic, salt, pepper, and chili powder. Cook until onions soften.
Prepare the Veggies
  1. Finely dice the tomato, cucumber, onion, and jalapeño using a food chopper or sharp knife. Season with salt to taste.
Make the Dill-Yogurt Sauce
  1. Combine Greek yogurt (or sour cream), salt, fresh dill, and minced garlic in a bowl. Mix well, adding a touch of water if using sour cream for a thinner consistency.
Assemble the Bowls
  1. Divide roasted sweet potatoes, ground meat, cheese, and veggies among four bowls. Top with lettuce, guacamole, and drizzle with the dill-yogurt sauce.
