1. Prepare Jell-O & Preheat Oven
- Preheat your oven to 350°F (175°C). In a large, heatproof bowl, combine the 6 oz package of strawberry Jell-O with 2 cups of freshly boiled water. Stir vigorously for at least 2 minutes until the Jell-O powder is completely dissolved. Set aside to cool completely to room temperature.
2. Crush Pretzels
- Place about 4 cups of whole salted pretzels (which will yield 2 cups crushed) into a sturdy resealable plastic bag. Use a rolling pin or the bottom of a heavy pan to crush them into a coarse texture, avoiding a fine powder.
3. Bake the Pretzel Layer
- In a medium saucepan, melt 12 Tbsp of unsalted butter over low heat. Remove from heat and stir in ¼ cup granulated sugar. Add the crushed pretzels and mix thoroughly until coated. Finely grate 1 tablespoon of fresh lemon zest and add ⅛ teaspoon of cayenne pepper into the pretzel mixture, stirring to combine evenly.
- Transfer the mixture to a 13x9 glass casserole dish, pressing it firmly and evenly over the bottom to form a compact crust. Bake for 10 minutes at 350°F (175°C) until lightly golden brown. Remove from the oven and let the crust cool completely to room temperature on a wire rack.
4. Create the Cream Cheese Layer
- Ensure your 8 oz package of cream cheese is very soft. In a large mixing bowl, use an electric hand mixer to beat the softened cream cheese and ½ cup granulated sugar on medium-high speed for about 2-3 minutes until light, fluffy, and white.
- Gently fold in 8 oz of thawed Cool Whip until no streaks of cream cheese remain, creating a smooth, cloud-like cream. Carefully spread this cream cheese mixture evenly over the completely cooled pretzel crust, ensuring it extends all the way to the edges of the dish to create a tight seal. Refrigerate for 30 minutes to firm up slightly.
5. Assemble the Strawberry Jell-O Layer
- Hull and thinly slice your 1 lb of fresh strawberries. Gently stir these slices into your room temperature Jell-O mixture. The Jell-O should be fully cooled but still liquid.
- Carefully pour and spread the strawberry Jell-O mixture evenly over the chilled cream cheese layer. Return the dish to the refrigerator and chill for 2-4 hours, or until the Jell-O is completely set and firm to the touch.
Notes
For best results, ensure the pretzel crust and Jell-O are cooled completely before adding subsequent layers. Spread the cream cheese tightly to the edges of the cooled crust to prevent sogginess.
