Spicy Ginger Switchel

Ingredients
  

  • 50 g fresh root ginger
  • 250 ml water (1 Cup)
  • 1 sml chilli
  • 4 tbsps honey (1/4 cup)
  • 80 ml apple cider vinegar (1/3 Cup)
  • 1/2 lemon

Method
 

  1. Thinly slice the fresh ginger, no need to peel it.
  2. Add the sliced ginger, water, and slightly crushed chilli to a saucepan.
  3. Bring the mixture to a boil, then simmer for about 5 minutes until the water reduces by half.
  4. Carefully stir in the honey until dissolved, ensuring not to overheat the mixture.
  5. Add the freshly squeezed juice of half a lemon.
  6. Allow the ginger and chilli mixture to cool completely before proceeding.
  7. Once cooled, add the apple cider vinegar. Pour the mixture into a clean glass container to meld flavors.
  8. To serve, pour about 30ml of concentrate into a glass. Top with soda water, tonic water, or ginger beer, and serve over ice with a fresh ginger slice.

Notes

Cooling the ginger-chilli mixture completely before adding ACV is crucial to preserve beneficial properties. For an extra boost, add a pinch of sea salt (approx. 1/8 tsp) to each serving. Concentrate lasts a week in the fridge.
