- Preheat oven to 425°F (220°C) or air fryer to 400°F (200°C). Line tray with parchment or silicone mat.
- Wash and chop cauliflower into 1-inch florets. Pat dry with paper towels.
- In a large bowl, combine buffalo hot sauce, oil, smoked paprika, salt, and pepper. Mix well.
- Toss cauliflower in sauce until evenly coated.
- Spread florets on baking sheet or air fryer basket in a single layer. Bake for 10 minutes, flip, and roast another 5–10 minutes (oven) or air fry 10 minutes, shake, and cook 5–10 more.
- Warm tortillas in a dry skillet, oven, or microwave. They should be soft and pliable.
- Fill each tortilla with buffalo cauliflower. Top with cabbage, vegan ranch, cilantro, lime, and avocado if desired. Serve immediately.
Notes
For best texture, use fresh cauliflower and don’t overcrowd during cooking. Adjust spice to your preference. Vegan ranch, tahini-lime sauce, or cashew cream all work well. Great with avocado and lime!
