  • 3/4 cup diced celery
  • 1/2 cup diced dill pickles
  • 1/2 cup sliced green onion
  • 1/2 cup plain Greek yogurt (or vegan substitute)
  • 1 tablespoon lemon juice
  • 1 to 2 tablespoons Dijon mustard
  • 2 teaspoons red wine vinegar
  • 2 tablespoons freshly chopped dill
  • 2 tablespoons freshly chopped parsley
  • 1/4 teaspoon garlic powder
  • Kosher salt and black pepper (to taste)
  • Pinch smoked paprika
  • Splash hot sauce

Method
 

  1. Prepare the Chickpeas: Thoroughly drain and rinse your two cans of chickpeas. For an exceptionally smooth and creamy salad, consider removing the skins. Place drained chickpeas on a clean dish towel, cover, and gently roll/rub for 20-30 seconds to loosen skins. Pick out and discard most skins; this step is optional but enhances creaminess.
  2. Mash the Chickpeas: Transfer the prepared chickpeas to a large mixing bowl. Using a fork or potato masher, mash most chickpeas while leaving some whole or chunky for texture. Avoid mashing into a smooth paste. Stir in the diced celery, sliced green onion, and diced dill pickles, gently combining with the mashed chickpeas.
  3. Whisk the Dressing: In a separate, smaller bowl, whisk together the plain Greek yogurt, fresh lemon juice, Dijon mustard, red wine vinegar, freshly chopped dill, freshly chopped parsley, and garlic powder. Stir in a pinch of smoked paprika and a splash of your favorite hot sauce. Whisk until the dressing is perfectly smooth and all ingredients are well combined.
  4. Combine & Adjust: Pour the whisked dressing generously over the mashed chickpea mixture in the large bowl. Stir thoroughly until all chickpeas and vegetables are evenly coated. Taste and adjust flavors as needed, adding more salt, pepper, lemon juice, Dijon mustard, hot sauce, or smoked paprika to achieve your desired balance of tangy, savory, and spicy notes.
