Phase 1: Preparing Your Cardamom & Eggs
- Gently open the cardamom pods and scoop out the black seeds. Grind these seeds into a fine powder using a mortar and pestle or a spice grinder. Use 2-3 pods for a subtle flavor or 4 for a stronger aroma. If using pre-ground cardamom, start with 1/4 teaspoon.
- In a small saucepan, gently warm 1/4 cup of heavy cream over low heat until it just simmers. Remove from heat, stir in the freshly ground cardamom, and let it steep for 10-15 minutes to infuse maximum flavor.
- Carefully separate the egg yolks from the egg whites. Place the egg whites into a very large, impeccably clean mixing bowl. In a separate small bowl, lightly whisk the egg yolks to loosen them, then set aside.
Phase 2: Melting the Chocolate & Infusing Flavor
- Break both dark and milk chocolates into smaller pieces and place them in a large heatproof bowl. Phase 3: Whipping Egg Whites & Assembling the Mousse
- Add a small pinch of salt to the egg whites in the large mixing bowl. Using a stand mixer or hand beater, whisk on medium-high speed until they form fairly firm, glossy peaks that hold their shape.
- Take about a third of the whipped egg whites and gently fold them into the chocolate mixture to loosen the base. This makes it easier to incorporate the remaining whites without deflating them.
- Delicately fold the remaining egg whites into the chocolate mixture using a spatula or "maryse." Use a light, lifting motion, turning the bowl as you go, until just combined. Be careful not to overmix, as this will deflate the air and result in a dense mousse. Stop folding as soon as no white streaks remain.
Phase 4: Chilling & Serving
- Delicately spoon or pipe the mousse into four elegant whiskey glasses or small dessert bowls.
- Place the glasses in the refrigerator to chill for 3 to 4 hours, or ideally, overnight, until the mousse is perfectly set and firm.
- When ready to serve, garnish with a little whipped cream, a delicate grating of chocolate, fresh raspberries, or a sprinkle of ground cardamom for an extra touch of decadence.
