Ingredients

  • 10.6 oz Boursin cheese (two 5.3 oz packages) Garlic & Fine Herbs or Shallot & Chive recommended
  • 1.5 cups chopped de-seeded tomatoes vine-ripened or Roma recommended
  • 0.25 cup fresh basil leaves chopped, plus more for garnish
  • 1 Tablespoon extra virgin olive oil
  • 1 Tablespoon balsamic vinegar
  • 1 clove garlic pressed or finely minced
  • salt and pepper to taste
  • balsamic reduction for drizzling
  • crackers or crostini for serving

Equipment

  • Baking sheet
  • Mixing Bowl
  • 8-9 inch shallow serving dish

Method

Prepare the Boursin and Oven
  1. Let the Boursin packages sit on the counter for 15-20 minutes to soften. Preheat your oven to 400°F (200°C).
Roast the Tomatoes
  1. Roughly chop or halve the tomatoes. Toss with olive oil, salt, and pepper. Spread on a baking sheet and roast for 15 minutes until softened and caramelized.
Assemble the Bruschetta Topping
  1. In a mixing bowl, combine the cooled roasted tomatoes with fresh basil, olive oil, balsamic vinegar, garlic, salt, and pepper. Let sit for 5 minutes to allow salt to draw out excess juices.
Layer the Dip
  1. Spread the softened Boursin into an 8-9 inch shallow serving dish, leaving a small strip of uncovered cheese around the edge for presentation.
Finish and Serve
  1. Spoon the bruschetta mixture over the cheese, leaving excess juices in the bowl. Drizzle with balsamic reduction and garnish with fresh basil. Serve with crackers or crostini.

Notes

Softening the Boursin at room temperature makes it much easier to spread. Be sure to leave the excess tomato juices in the bowl to keep the dip from becoming watery.
