Phase 1: Prepare the Cauliflower and Batter
- Prep the Cauliflower: Carefully break down your head of cauliflower into small, bite-sized florets, aiming for pieces roughly 1-inch in size, just like popcorn. Ensure they are thoroughly washed and then patted completely dry – moisture is the enemy of crispiness!
- Prepare the Batter: In a large bowl, whisk together the 500g of doves farm Gluten free self-raising flour and the 660ml of cider. Continue whisking until you have a smooth batter that is thick enough to cling to the cauliflower but still thin enough to drip lightly, much like a good pancake batter.
- Coat the Cauliflower: Working in batches, dip each dry cauliflower floret into the prepared batter, ensuring it’s fully coated. Let any excess drip off, then transfer the battered florets to a bowl of Gluten free bread crumbs. Toss thoroughly until each floret is evenly coated.
Phase 2: Bake and Sauce the Cauliflower
- Bake the Cauliflower: Preheat your oven to 400°F (200°C). Arrange the breaded cauliflower florets in a single layer on a large baking sheet lined with parchment paper, making sure not to overcrowd the pan. Bake for 20-25 minutes, flipping them halfway through, until they are beautifully golden brown and delightfully crispy.
- Prepare and Apply the Bang Bang Sauce: While the cauliflower bakes, prepare your Bang Bang Sauce. In a small bowl, whisk together the 50ml Frank’s buffalo hot sauce, 2tsp sesame oil, 1 tsp black & white sesame seeds, 1 tsp garlic purée, and 1-2 tsp chopped parsley. Once the cauliflower is baked and still hot, transfer it to a large mixing bowl. First, drizzle about 2-3 tablespoons of melted plant-based butter over the hot cauliflower and toss gently to coat. Immediately follow by pouring the Bang Bang Sauce mixture over the butter-coated cauliflower and toss vigorously until every piece is gloriously coated.
Phase 3: Assemble the Ranch Dip and Garnish
- Make the Vegan Ranch Dip: In a separate large bowl, whisk together all the ingredients for the Vegan ranch dip: 324g vegan mayonnaise, 78ml oat milk, 20ml white wine vinegar, 5g dried garlic powder, 5g dried onion powder, 1 tsp chopped dill, 1 1/2 tbsp chopped parsley, salt to taste, and 1/4 tsp ground white pepper. Whisk until perfectly smooth and creamy. Transfer the finished dip to a small ramekin or serving bowl.
- Finish and Garnish: Transfer the sauced Ranch Cauliflower Popcorn to a serving platter. Generously sprinkle with dried chilli flakes, fresh sliced green chilli, sliced spring onions, toasted black & white sesame, and fresh coriander for an explosion of flavor and visual appeal. Serve immediately with the creamy Vegan Ranch Dip on the side.
Notes
To ensure crispy cauliflower, always pat florets dry, use cold batter, and avoid overcrowding the baking sheet. Tossing hot cauliflower with 2-3 tablespoons of melted plant-based butter before adding buffalo sauce is crucial for flavor and adherence. Reheat leftovers in an oven or air fryer for best results.
