Ingredients

  • 1 cup steel cut oats
  • 3 cups boiling water (for soaking)
  • 1 cup milk (dairy or non-dairy, for cooking)
  • 1/4 teaspoon salt
  • Optional toppings honey, maple syrup, fresh fruit, nuts, seeds

Equipment

  • Medium pot
  • lid

Method

Pre-Soaking the Oats
  1. Bring 3 cups of water to a rolling boil in a medium pot.
  2. Pour the boiling water over the 1 cup of steel cut oats in the pot. Stir once to submerge the oats.
  3. Cover the pot tightly with a lid and let the oats soak undisturbed for 15-20 minutes. The oats will plump up and soften.
Finishing on the Stovetop
  1. After soaking, open the pot. If any excess water remains, gently drain it.
  2. Add 1 cup of milk and 1/4 teaspoon of salt to the soaked oats in the pot.
  3. Bring the mixture to a gentle simmer over medium heat. Once it bubbles, reduce heat to low. Cook for 5-7 minutes, stirring occasionally until oats thicken and become creamy.
  4. Remove from heat, cover, and let sit for an additional 2-3 minutes to thicken further. Serve hot with your favorite toppings.

Notes

Steel cut oats are excellent for meal prepping. Store in an airtight container for up to 5 days in the fridge or freeze for up to 3 months; reheat with a splash of liquid. Always use a heavy-bottomed pot and stir frequently to prevent sticking. Add a pinch of salt to enhance flavors.
