One Pan Mexican Pasta Skillet

Ingredients
  

  • 16 oz whole-wheat pasta (penne or rotini)
  • 2 tbsp extra virgin olive oil
  • 1 bell pepper, chopped
  • 1 jalapeño, seeds removed and finely chopped
  • 3/4 cup corn kernels (fresh or frozen)
  • 2 cloves garlic, minced
  • 15 oz can black beans, rinsed and drained
  • 14.5 oz can diced tomatoes with liquid
  • 3 1/2 cups vegetable broth or water
  • 1 cup unsweetened dairy-free yogurt or sour cream
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp ground turmeric
  • salt and pepper, to taste

Method
 

  1. Heat olive oil in a large deep skillet over medium heat. Add bell pepper and jalapeño, and cook for 5–7 minutes until soft.
  2. Stir in corn and garlic. Cook for 1–2 minutes until garlic is fragrant.
  3. Add black beans and diced tomatoes with their liquid. Stir to combine.
  4. Add uncooked pasta and pour in the broth or water. Stir to submerge pasta.
  5. Bring to a gentle simmer. Cover and cook for 15–18 minutes, stirring occasionally, until pasta is tender.
  6. Remove from heat. Stir in yogurt, chili powder, cumin, smoked paprika, and turmeric.
  7. Mix well until sauce thickens. Season with salt and pepper to taste.

Notes

Use dairy-free yogurt for a vegan version, and gluten-free pasta if needed. Adjust spice level by changing the jalapeño quantity or omitting it. Stir in cheese at the end for extra creaminess, and don’t skip the stirring during cooking to avoid sticking.
