Mexican-Style Beef Sausage Nachos

Ingredients
  

  • 1 pound Mexican-style ground beef sausage
  • 1 poblano chile pepper, deseeded and finely diced
  • 1 bag tortilla chips (about 13 oz)
  • 1 can black beans (15 oz), rinsed and drained
  • 2 cups reduced-fat shredded Mexican blend cheese
  • 1/2 cup salsa verde
  • 1 can diced tomatoes (10 oz), drained
  • 1/2 cup salsa (mild or medium)
  • 1/4 cup fresh cilantro, chopped
  • sour cream or crema, for drizzling
  • 2 green onions, sliced
  • 1 avocado, diced or sliced
  • 1 lime, cut into wedges for serving

Method
 

  1. Preheat oven to 400°F (200°C) to ensure even baking of nachos.
  2. In a large cast-iron skillet over medium heat, cook beef sausage for 8–10 minutes, breaking into crumbles.
  3. Add diced poblano pepper to sausage. Cook until sausage is fully browned and pepper is soft.
  4. Drain sausage mixture and wipe out skillet to remove excess fat.
  5. Mix salsa verde with half the cilantro in a small bowl. In another bowl, mix diced tomatoes and salsa.
  6. In skillet or baking dish, layer half the tortilla chips. Add half the beans and sausage mixture. Drizzle half of the salsa verde mix.
  7. Repeat layers with remaining chips, beans, sausage, and salsa verde. Spoon over tomato-salsa mix.
  8. Sprinkle cheese evenly over the entire dish.
  9. Bake for 18–20 minutes until cheese is melted, bubbly, and slightly browned.
  10. Remove from oven. Garnish with sour cream, green onions, avocado, and reserved cilantro. Serve with lime wedges.

Notes

Swap beef sausage with chorizo or ground beef with taco seasoning. Try different cheeses like Monterey Jack or cheddar. Add diced bell peppers, corn, or red onion for variety. Prepare toppings in advance to save time.
