Prepare the Dates

Melt the Espresso-Infused Chocolate
  1. In a microwave-safe bowl, combine the 3/4 cups of chopped dark chocolate and a small amount of espresso powder (start with 1/4 teaspoon for a subtle hint, up to 1/2 teaspoon for a stronger mocha kick). Heat in the microwave at 20-second increments, stirring thoroughly after each time, until the chocolate is smooth and glossy. Alternatively, melt the chocolate in a pot on the stove set to low heat, stirring constantly until melted, then immediately remove the pot from the heat.
Dip and Coat
  1. Add one date to the bowl of melted chocolate. Gently stir to thoroughly coat it in chocolate. For an extra layer of flavor and texture, consider stuffing your pitted dates with a toasted nut or a dollop of nut butter before dipping.
Lift and Drip
  1. Using a fork, lift the date out of the chocolate, allowing any excess chocolate to drip back into the bowl. This helps ensure a neat, even coating.
Add Toppings Immediately
