Hearty Slow Cooker Chicken and Dumplings

Ingredients
  

  • 1 large yellow onion, diced
  • 10.5 oz condensed cream of celery soup (1 can)
  • 10.5 oz condensed cream of chicken soup (1 can)
  • 1 tbsp chopped fresh parsley, plus more for garnish
  • 1 tsp poultry seasoning
  • black pepper, to taste
  • 4 boneless skinless chicken breasts
  • 2 cups reduced-sodium chicken broth
  • 2 cups frozen mixed vegetables (or peas and carrots)
  • 16.3 oz refrigerated biscuit dough (1 can Buttermilk, Country, or Homestyle)

Method
 

  1. Place diced onion into the bottom of a 6-quart slow cooker. Layer chicken breasts over the onions.
  2. In a bowl, mix together cream of celery soup, cream of chicken soup, 1 tbsp chopped parsley, poultry seasoning, and black pepper. Spread evenly over chicken in the slow cooker.
  3. Pour chicken broth over the mixture. Do not stir. Cover and cook on HIGH for 4–5 hours or LOW for 6–7 hours.
  4. About 1 to 1.5 hours before serving, stir in frozen mixed vegetables.
  5. Cut each refrigerated biscuit into 4 strips. Lay them on top of the stew in a single layer without submerging. Do not stir.
  6. Cover and cook for another 60–90 minutes, until dumplings are fluffy and cooked through.
  7. Optional: shred chicken in the slow cooker with forks. Garnish with fresh parsley and serve hot.

Notes

Substitute chicken thighs for richer flavor. Use homemade dumplings if preferred. Add spinach or mushrooms for extra veggies. Avoid flaky-layer biscuits. Stir in a bit of cream at the end for richness.
