For the Charred Bell Peppers
  • 12 mini bell peppers
  • olive or avocado oil spray
For the Turkey Taco Meat
  • 1/2 Tablespoon olive oil
  • 1 lb ground turkey
  • 2 Tablespoons taco seasoning
  • 2 Tablespoons fresh salsa
For the Salad Base and Toppings
  • 1 large head romaine lettuce (washed, rinsed, dried and chopped)
  • 1/2 cup grape or cherry tomatoes (chopped)
  • 1/2 cup thawed frozen sweet corn
  • 1/4 cup shredded Mexican cheese + more to taste
  • 1/2 jalapeño pepper (de-seeded and chopped (optional))
  • 1 avocado (chopped into chunks)
  • 1/4 cup tortilla chips (broken into pieces)
  • chopped cilantro (for garnish)
  • hot sauce (to taste (optional))
  • fresh salsa (to taste)
For the Southwest Greek Yogurt Dressing
  • 4 ounces plain Greek yogurt
  • 1 teaspoons lime juice
  • 1/8 teaspoon cumin
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup fresh salsa
  • 2 Tablespoons fresh cilantro

Equipment

  • Tongs
  • Bowl
  • plastic wrap or plate
  • Blender (or Immersion Blender)
  • Large Skillet
  • spatula or meat chopper

Method

Step 1: Char the Bell Peppers (Unique Twist)
  1. Place the mini bell peppers directly over a medium gas flame on your stovetop, using tongs to turn them frequently. If you do not have a gas stovetop, you can place them under a preheated broiler. Keep turning them until their skins are completely blackened and blistered all over. This only takes a few minutes.
  2. Transfer the charred peppers to a bowl, cover it tightly with plastic wrap or a plate, and let them steam for 10-15 minutes.
  3. Once cooled, gently peel away the blackened skin, remove the stems and any large seeds, and then dice the softened, smoky peppers into small pieces. You should have about 1/3 cup of diced peppers.
Step 2: Blend the Southwest Dressing
  1. Add all of the Southwest Greek yogurt dressing ingredients into a blender. Process until the mixture is fully combined and smooth. Taste and adjust the seasonings if needed.
Step 3: Cook the Turkey Taco Meat
  1. Heat the olive oil in a large skillet over medium heat. Once hot, add the ground turkey. Use a spatula or meat chopper to break the meat into small, even crumbles as it cooks.
  2. Continue cooking for about 6-8 minutes, or until the turkey is no longer pink and is beautifully browned. Drain any excess fat if necessary.
  3. Add the taco seasoning, fresh salsa, and your diced charred bell peppers to the pan. Toss everything together to combine, ensuring the turkey and peppers are coated in the flavorful seasoning. Set aside.
Step 4: Assemble the Taco Salads
  1. While the turkey is cooking, prep all remaining salad ingredients: wash and chop romaine lettuce, tomatoes, and jalapeño, and dice avocado.
  2. To build your individual salads, start with a generous base of chopped romaine lettuce in each bowl.
  3. Artfully arrange the toppings over the lettuce: spoonfuls of turkey taco meat, chopped tomatoes, sweet corn, shredded Mexican cheese, optional jalapeño, chunks of creamy avocado, and a sprinkle of broken tortilla chips.
Step 5: Serve
  1. Drizzle a little of your homemade Southwest Greek yogurt dressing over each salad. Garnish generously with fresh chopped cilantro.
  2. Serve with additional fresh salsa and a few drops of hot sauce if desired. Alternatively, place all salad ingredients into a large salad bowl and gently toss with the dressing just before portioning and serving. Enjoy!

Notes

For efficiency, use a meat chopper for ground turkey and prep salad ingredients while the meat cooks. Don't be afraid to fully char the bell peppers for maximum smoky flavor, as the blackened skin will be removed. Always taste and adjust the Southwest dressing seasonings to your preference. Assemble salads just before serving to keep lettuce and chips crisp. Leftover taco meat stores well for 3 days, dressing for 5 days, making this recipe excellent for meal prep.
