Phase 1: Crafting the Almond Shortbread Crust
- In a large bowl, whisk together the all-purpose flour, almond flour, powdered sugar, and salt.
- Add the cold, cubed unsalted butter to the dry ingredients. Use a pastry blender or your fingertips to cut the butter into the flour mixture, aiming for coarse crumbs with pea-sized pieces of butter. Work quickly to prevent the butter from melting.
- In a small separate bowl, whisk the egg yolk with the ice water. Pour this mixture into the flour and butter mixture, stirring until the dough just begins to come together. Be careful not to overwork the dough.
- Gather the dough into a disc, wrap it tightly in plastic wrap, and refrigerate for at least 30 minutes, or up to an hour for best results.
- Preheat your oven to 375°F (190°C). Lightly grease a 9-inch tart pan with a removable bottom.
- On a lightly floured surface, roll out the chilled dough into a 12-inch circle. Carefully transfer the dough to the prepared tart pan, pressing it gently into the bottom and up the sides. Trim any excess dough.
- Blind bake the crust: Prick the bottom of the crust all over with a fork. Line the crust with parchment paper and fill with pie weights, dried beans, or rice.
- Bake for 15-20 minutes, or until the edges are just beginning to turn golden. Carefully remove the parchment paper and weights. Continue baking for another 5-10 minutes, or until the entire crust is golden brown and looks dry.
- Remove the crust from the oven and let it cool completely on a wire rack.
Phase 2: Preparing the Creamy Mascarpone Filling
- In a large bowl, combine the room-temperature mascarpone cheese, heavy cream, granulated sugar, and vanilla extract.
- Using an electric mixer, beat the mixture on medium-high speed until it's light, fluffy, and holds soft peaks. Be careful not to overbeat.
Phase 3: Assembling Your Romantic Tart
- Once the almond shortbread crust is completely cooled, pour the mascarpone filling into the tart shell. Spread it evenly with an offset spatula or the back of a spoon.
- Gently arrange the fresh raspberries on top of the mascarpone filling. Start from the outside edge and work your way in, creating an elegant pattern.
- Refrigerate the tart for at least 1-2 hours to allow the filling to set properly, ensuring it is perfectly chilled and refreshing when served.
- Just before serving, for an extra touch of elegance, lightly dust the tart with powdered sugar, if desired.
Notes
This tart is ideal for make-ahead planning: bake the crust up to 2-3 days in advance and prepare the filling a day ahead. Assemble 2-4 hours before serving for optimal freshness. For an extra bright flavor, a hint of lemon zest in the filling works wonders. Serve chilled with a sparkling rosé or espresso.
