Easy Vegan Tostadas

Ingredients
  

  • 8 corn tortillas
  • 2 tbsp vegetable oil or olive oil spray
  • salt (to taste)
  • 2 ripe avocados, pitted and diced
  • 1 cup diced fresh tomato
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 2 tbsp fresh lime juice
  • 1/2 tsp ground cumin
  • 1/4 tsp salt (plus more to taste)
  • black pepper (to taste)
  • 2 cups vegan refried black beans (homemade or store-bought)
  • 1/2 cup shredded green cabbage
  • optional toppings: vegan sour cream, vegan cheese, pickled jalapeños, hot sauce

Equipment

  • large baking sheets

  • Medium mixing bowl for salsa
  • small saucepan or microwave-safe bowl for beans
  • Spatula or spoon

Method
 

  1. Preheat oven to 400°F (200°C). Line baking sheets with parchment paper. Lightly brush or spray both sides of tortillas with oil. Arrange on baking sheets and sprinkle with salt. Bake 8–10 minutes until crisp and golden.
  2. In a medium bowl, mix diced avocado, tomato, red onion, cilantro, lime juice, cumin, salt, and pepper. Stir gently to combine.
  3. Warm refried black beans in a saucepan over medium heat or in the microwave until hot.
  4. Spread a layer of warm beans over each crispy tortilla. Add shredded cabbage and a generous scoop of avocado salsa.
  5. Top with optional vegan sour cream, vegan cheese, or hot sauce. Serve immediately while crispy.

Notes

Bake or air-fry tortillas for crispiness without deep frying. Serve immediately after assembling to prevent sogginess. You can prep beans and salsa ahead, but store them separately. Add optional toppings like vegan cheese, sour cream, or jalapeños for variety.
