Processing the Mixture
- Add all ingredients except vegan white chocolate to a food processor. Pulse until a sticky, crumbly mix forms that holds together when pressed. Avoid over-processing if you prefer a chunkier texture.
Rolling the Truffles
- Portion the mixture with a cookie scoop or large spoon. Roll each portion into a smooth ball. Create a small indentation in the center of each truffle using a piping bag or small spoon. Fill the indentation with a mixture of vegan cream cheese, a touch of maple syrup, and vanilla extract. Arrange on a parchment-lined dish and chill in the freezer for 30 minutes or longer to firm up.
Melting the White Chocolate
- Break the vegan white chocolate bar into small chunks. Place in a heat-proof bowl over a pot of gently boiling water (double boiler method), ensuring the bowl does not touch the water. Cover and stir occasionally until smooth and pourable. Add 1 teaspoon (or more) coconut oil if needed for consistency. Let cool for about 5 minutes before dipping.
Dipping and Setting
- Remove firm truffles from the freezer. Dip each truffle into the cooled melted white chocolate, ensuring even coverage. Place dipped truffles back on the parchment-lined dish. Return to the freezer for another 15 minutes or longer until the coating is fully set. Store any leftovers in an airtight container.
