Bowl of crab egg fried rice with carrots, scallions, and golden egg on white marble

Easy Crab Egg Fried Rice

Cold cooked rice is coated with golden egg yolks, then tossed with sweet shredded crab, diced carrots, green scallions, and savory dark seasoning sauce in one hot wok.

Ingredients

  • 4 cups cold cooked white rice
  • 3 large egg yolks
  • 1/2 cup diced carrots
  • 3 green scallions sliced
  • 8 oz shredded crab meat
  • 2 tablespoons dark seasoning sauce
  • 2 tablespoons neutral cooking oil

Method

  1. Add the neutral oil to the wok and spread it over the cooking surface. Invert a bowl of cold cooked white rice into the center of the oiled wok.
  2. Pour the three egg yolks directly over the mound of rice.
  3. Place the wok over an active gas burner. Keep the carrots, scallions, crab, and sauce within reach.
  4. Use a metal spatula to fold and scramble the yolks into the rice until the grains begin to look evenly golden.
  5. Add the diced carrots and sliced green scallions. Toss to distribute.
  6. Add the shredded crab meat and fold gently through the rice.
  7. Drizzle the dark seasoning sauce over the rice.
  8. Toss until the rice is hot, the yolks are cooked, and everything is evenly mixed and lightly coated.
  9. Scoop into a serving bowl and serve immediately.

Notes

Chef’s Tip: Use cold cooked rice for the best fried rice texture, so the grains stay separate while the egg yolks coat them evenly.
