Prep for Blending
- Place your rock-solid frozen banana slices into a high-speed food processor or a powerful blender. Add 2 tablespoons of unsweetened almond milk, along with a generous pinch of salt and a tablespoon of fresh lemon juice. Blend to Perfection
- Begin blending on high for 1 to 2 minutes. The mixture will go from chunky to crumbly, then start to smooth out. Stop your blender or food processor every 30 seconds or so and scrape down the sides to ensure even processing and prevent motor overheating.
Adjust Consistency
- If your blender is still struggling to create a smooth mixture after a couple of minutes, add more almond milk. Be very cautious, adding only a tablespoon at a time, and blend briefly after each addition. The goal is a super thick soft-serve consistency, not a runny liquid.
Serve Immediately or Prepare for Freezing
- Once your Banana Nice Cream is pureed and has a wonderfully creamy, thick, soft-serve texture, it's ready! Enjoy it immediately, or transfer the mixture to a parchment-lined bread pan or freezer-safe container if you prefer a firmer, ice cream-like scoop later.
Freeze for Scooping (Optional)
- To achieve a scoopable, ice cream-like consistency, transfer your nice cream to a freezer-safe container and freeze it for 1 to 2 hours. This duration allows it to harden enough to be scooped beautifully without becoming an impenetrable block.

For the best nice cream, ensure your bananas are very ripe (yellow with brown spots) and rock-solid frozen. Peel and slice them into 1-inch coins before freezing them in a single layer to prevent clumping. When blending, scrape down the sides frequently to ensure an even, smooth texture and prevent motor strain. If storing for later, transfer to an airtight, freezer-safe container and press a piece of parchment paper directly onto the surface to prevent ice crystals. It will keep for 1-2 weeks. To enjoy stored nice cream, let it sit at room temperature for 10-15 minutes to soften, or re-blend briefly with a splash of milk for soft-serve consistency.
