Ingredients

  • 1 pound pecans, halves or pieces
  • 1 cup granulated sugar
  • 1/4 cup unsalted butter
  • 1/4 cup water
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt

Equipment

  • Large, heavy-bottomed skillet (preferably non-stick)
  • Baking sheet
  • Parchment paper or silicone mat
  • Wooden spoon or heat-proof spatula
  • Two Forks

Method

Prepare Your Workspace
  1. Before you begin cooking, it's crucial to have everything ready. Line a baking sheet with parchment paper or a silicone mat. This step is essential for cooling your candied pecans without them sticking.
Melt and Simmer the Syrup
  1. In a large, heavy-bottomed skillet (preferably non-stick for easier cleanup), combine the granulated sugar, water, unsalted butter, and salt. Place the skillet over medium-high heat. Stir constantly until the butter is completely melted and the sugar is fully dissolved.
  2. Bring the mixture to a rolling boil, then reduce the heat slightly to maintain a steady, vigorous simmer. Let it cook, stirring occasionally, for 4-5 minutes, or until the syrup begins to thicken and takes on a slightly golden hue. Watch carefully to prevent burning the sugar.
Add Pecans and Flavorings
  1. Once the syrup has thickened, add the pecan halves to the skillet. Stir vigorously and continuously with a wooden spoon or heat-proof spatula. Coat the pecans thoroughly with the simmering syrup.
  2. Continue to cook, stirring constantly, for another 3-5 minutes. You'll notice the syrup getting even thicker and starting to crystallize around the pecans, turning opaque and sandy in texture. Keep stirring as the sugar goes from granular to a glossy, amber coat.
Introduce the Secret Ingredient
  1. When the pecans are well coated and the sugar mixture is thick and bubbly, remove the skillet from the heat. Immediately stir in the vanilla extract, ground cinnamon, and the all-important baking soda. Stir quickly and thoroughly for about 30 seconds. The baking soda will cause the mixture to foam slightly, which creates tiny air pockets for the ultimate crunchy pecan coating.
Cool and Separate
  1. Without delay, pour the hot candied pecans onto your prepared baking sheet. Using your spatula or two forks, quickly spread them out into a single, even layer, separating any clumps as much as possible. This rapid spreading is key to preventing them from sticking together as they cool.
  2. Allow the pecans to cool completely for at least 30 minutes to 1 hour. As they cool, the sugar coating will harden and become wonderfully crisp. Once cool, break apart any remaining clusters with your hands.

Notes

Proper storage in an airtight container at room temperature will keep these candied pecans fresh and crunchy for up to 2-3 weeks. Avoid humid environments.
