Prepare the Crockpot and Chicken
- Spray the inside of your crockpot with non-stick cooking spray. This simple step makes cleanup so much easier later on.
- Place the boneless skinless chicken breasts evenly in the bottom of the crockpot. This forms the delicious base of our slow cooker meal.
- Pour the entire bottle of Parmesan garlic sauce generously over the chicken. The aroma of garlic will already begin to fill your kitchen.
- Add the cream cheese, cut into pieces, and the grated Parmesan cheese on top of the chicken and sauce. This is also the time to add 1/4 cup of sun-dried tomatoes, oil-packed and drained. This twist adds a lovely depth of flavor. Ensure your cream cheese is at room temperature to help it melt smoothly and avoid curdling.
Slow Cook the Chicken
- Cover the crockpot with its lid and let the magic happen. Cook on low for 5-6 hours or on high for 3-4 hours. The chicken will be perfectly cooked through when it reaches an internal temperature of 165 degrees F and shreds easily with two forks, indicating it is tender and juicy.
Finish with Pasta
- Before serving, gently shred the cooked chicken directly in the crockpot using two forks. Then, stir it to thoroughly mix into the rich, thickened Parmesan garlic sauce. The sauce will look wonderfully creamy and inviting.
- Cook your chosen dry pasta according to the package instructions until it is al dente. Drain it well, reserving about 1/4 cup of the pasta water.
- Stir in the 1/4 cup of reserved pasta water into the chicken and sauce mixture to emulsify it, creating an even creamier, more cohesive sauce that clings perfectly to the pasta.
- Finally, add the cooked pasta to the crockpot. Stir everything to combine, ensuring every piece of pasta and chicken is coated in that luscious sauce.
- Garnish generously with fresh parsley and a sprinkle of red pepper flakes for a touch of color and a hint of warmth. Enjoy this comforting Crockpot Garlic Parmesan Chicken Pasta!
Notes
If the sauce is too thick, thin it with a splash of warm chicken broth, milk, or reserved pasta water. If too thin, thicken with a cornstarch slurry or simmer uncovered with the lid off. For juicier results, consider using boneless chicken thighs and ensure cream cheese is at room temperature before adding. Avoid using frozen chicken directly and do not overcook the chicken or pasta. Store leftovers in an airtight container for 3-4 days, ideally pasta and sauce separately to prevent sogginess. Reheat with a splash of milk or broth.
