Ingredients

  • 1 lb boneless skinless chicken breasts
  • 1 yellow onion, diced
  • 2 cloves garlic, minced
  • 24 oz low-sodium chicken broth
  • 2 15 oz cans Great Northern beans, drained and rinsed
  • 2 4 oz cans diced green chiles (one mild, one hot)
  • 1 15 oz can whole kernel corn, drained
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp cumin
  • 3/4 tsp oregano
  • 1/2 tsp chili powder
  • 1/4 tsp cayenne pepper
  • Small handful fresh cilantro, chopped
  • 4 oz reduced-fat cream cheese, softened
  • 1/4 cup half and half

Equipment

  • Slow Cooker (6-quart) Main cooking vessel
  • sharp knife and cutting board For prepping onion and garlic
  • Mixing Bowl To whisk cream cheese if needed
  • Forks For shredding cooked chicken
  • Ladle For serving chili

Method

  1. Add chicken breasts to the bottom of the slow cooker. Season with salt, pepper, cumin, oregano, chili powder, and cayenne. Add onion, garlic, beans, green chiles, corn, broth, and cilantro. Stir gently to combine.
  2. Cover and cook on LOW for 8 hours or HIGH for 3–4 hours until chicken is tender.
  3. Remove chicken from the slow cooker and shred with two forks. Return shredded chicken to the pot.
  4. Whisk softened cream cheese with a ladle of hot chili liquid until smooth. Stir cream cheese mixture and half and half into the slow cooker. Cover and cook on HIGH for 15 more minutes.
  5. Give chili one final stir. Serve hot with desired toppings such as avocado, sour cream, shredded cheese, or tortilla strips.

Notes

Use softened cream cheese for smooth blending, and adjust spice level by using mild or hot diced green chiles. You can substitute Great Northern beans with cannellini beans. Add extra vegetables like diced bell peppers or zucchini for more nutrition.
