Creamy Tuscan salmon penne with spinach and cherry tomatoes in a skillet

Creamy Tuscan Salmon Penne

Golden seared salmon, tender penne, fresh spinach, and juicy cherry tomatoes in a silky tomato-mascarpone cream sauce.

Ingredients

For the Salmon
  • 2 salmon fillets
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly cracked black pepper divided
For the Tomato-Mascarpone Sauce
  • 1 cup whole cherry tomatoes
  • 1/4 cup water
  • 3 cloves fresh garlic minced
  • 1 cup heavy cream
  • 4 ounces mascarpone cheese
  • 1/2 cup finely grated Parmigiano-Reggiano
  • 2 tablespoons fresh flat-leaf parsley chopped
  • 2 cups fresh baby spinach
  • 1 cup fresh cherry tomatoes halved
  • 1 tablespoon hot honey or chili oil
For the Pasta
  • 8 ounces penne rigate cooked al dente

Equipment

Method

  1. Season both salmon fillets with paprika, salt, and black pepper. Heat the olive oil in a skillet over medium heat and sear the salmon until deeply golden. Flip, finish cooking, and transfer to a plate.
  2. Add the whole cherry tomatoes to the salmon-seasoned pan juices. Pour in the water, cover, and cook until softened and blistered.
  3. Remove the lid, add the minced garlic, and crush the softened tomatoes in the skillet to create a rustic tomato base. Season with the remaining black pepper.
  4. Pour in the heavy cream. Add the mascarpone, Parmigiano-Reggiano, and parsley, stirring gently over low heat until smooth and creamy.
  5. Add the baby spinach and halved cherry tomatoes, then drizzle with the hot honey or chili oil. Fold gently until the spinach begins to wilt.
  6. Add the cooked penne and toss until thoroughly coated.
  7. Break the salmon into large tender flakes and gently fold it into the pasta.
  8. Serve immediately while hot and creamy.

Notes

Fold the salmon in at the very end and stir gently so the golden pieces stay large and flaky instead of breaking apart.
