Creamy shrimp-stuffed yellow Caribe chiles with red onion and cilantro

Creamy Shrimp-Stuffed Caribe Chiles

Creamy roasted yellow Caribe chiles filled with shrimp, mushrooms, garlic, and cream cheese, then finished with a citrus-soy glaze, marinated red onion, and fresh cilantro.

Ingredients

For the Stuffed Chiles
  • 12 yellow Caribe chiles
  • 1 pound raw shrimp peeled, deveined, and chopped into bite-size pieces
  • 8 ounces brown button mushrooms finely chopped
  • 1/2 medium white onion finely diced
  • 3 cloves fresh garlic minced
  • 1 tablespoon extra virgin olive oil
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly cracked black pepper
  • 8 ounces cream cheese softened
For the Citrus-Soy Sauce
  • 1/4 cup soy sauce
  • 1 tablespoon Maggi seasoning sauce
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon toasted sesame oil
  • 1/2 small red onion thinly sliced
  • 1/2 cup fresh cilantro leaves

Method

  1. Place the chiles directly over medium heat. Turn regularly until the skins are blistered and lightly charred on all sides.
  2. Transfer the roasted chiles to a glass container and cover. Let them steam, peel away the blistered skins, cut a shallow slit lengthwise into each chile, and carefully remove the seeds and inner veins.
  3. Heat the olive oil in a skillet over medium heat. Add the white onion and sauté until soft and translucent. Stir in the garlic and cook briefly until fragrant.
  4. Add the mushrooms and cook until their moisture reduces. Add the shrimp, sea salt, and black pepper. Sauté until the shrimp are opaque and coral-pink, then remove from the heat.
  5. Transfer the shrimp mixture to a bowl. Add the softened cream cheese and fold until evenly combined and creamy.
  6. Stir together the soy sauce, Maggi seasoning sauce, Worcestershire sauce, lemon juice, and toasted sesame oil. Add the red onion and toss until coated.
  7. Gently open each roasted chile and fill generously with the creamy shrimp and mushroom mixture.
  8. Arrange the stuffed chiles on a serving platter. Spoon the citrus-soy sauce and marinated red onion over the peppers, then finish with fresh cilantro.

Notes

Let the roasted chiles steam while covered before peeling so the blistered skins loosen easily and the tender peppers stay intact for stuffing.
