Step 1: Slicing and Seasoning
- Slice the chicken breast into 2-3 thinner slices. If needed, pound them with a meat tenderizer. This helps the chicken cook more evenly and ensures it remains tender. Aim for slices that are approximately ½ inch thick.
Step 2: Patting Dry and Buttering
- Pat the chicken completely dry with paper towels. Sprinkle each side generously with Italian seasoning, salt, and pepper. Then, brush one side of each piece of chicken with melted butter, making sure the butter is not too hot. Brushing the chicken with melted butter not only adds more flavor but significantly enhances the development of a golden brown, crusty sear.
Step 3: Searing the Chicken
- Heat the olive oil in a large skillet over medium-high heat. Sear the chicken in batches for 4-5 minutes per side, until a beautiful golden brown crust has developed. Remove the seared chicken breast from the skillet and set it aside on a plate.
Step 4: Making the Sauce
- Using the same skillet, reduce the heat to medium. Add the cream of chicken soup, milk, sour cream, onion powder, Ranch seasoning mix, and the all-important Dijon mustard. Stir these sauce ingredients until they are well combined and smooth. Let the sauce bubble gently and reduce for about 5 minutes, allowing the flavors to meld and the sauce to thicken slightly. Now, return the seared chicken to the skillet and spoon the rich sauce generously on top.
Step 5: Simmering and Serving
- Cover the skillet partially and let the Creamy Ranch Chicken simmer for about 10 minutes. This allows the chicken to heat through completely and absorb all those wonderful flavors from the sauce. Always ensure the chicken reaches an internal temperature of 165°F (74°C) for food safety.
Step 6: Optional Serving
- This Creamy Ranch Chicken is fantastic served in many ways! I particularly love serving it with warm baked potatoes. Simply spoon that luscious sauce over each potato; it is so good that way!
Notes
For best results, use Ranch seasoning mix, not dip mix. If you're not typically a ranch lover, don't worry—the seasoning adds savory zest without tasting like bottled dressing. Feel free to add frozen vegetables to the sauce or serve with crispy crumbled bacon. Store leftovers in an airtight container in the fridge for up to 3-4 days, reheating gently. While freezing is possible, the sauce may separate; whisk vigorously upon reheating. Ensure sour cream is at room temperature and avoid over-salting as ranch seasoning is already salty.
