1. Sauté the Aromatics
- Melt the unsalted butter over medium heat in a large soup pot or Dutch oven. Add the chopped leeks and smashed garlic. Cook, stirring regularly, until the leeks are soft and wilted, about 10 minutes. Adjust the heat as necessary so as not to brown the leeks.
2. Deglaze for Depth

4. Purée to Perfection
- Carefully fish out the thyme sprigs and bay leaves. Using a hand-held immersion blender, purée the soup directly in the pot until it is completely smooth. (If using a standard blender, work in batches, leaving the hole in the lid open and covering loosely with a dishtowel to allow heat to escape).
5. Finish with Cream and Season
- Add the heavy cream to the puréed soup and bring it to a gentle simmer. Avoid a vigorous boil. Taste and adjust the seasoning with additional salt and pepper as needed. If too thin, simmer uncovered; if too thick, add a little water or broth. Garnish with fresh, finely chopped chives if desired.

For the best results, meticulously clean your leeks to avoid grittiness, and cook them slowly until translucent, not browned, to develop a sweet flavor base.
