Crucial First Step: Bloom Your Oats!
- In a medium-sized bowl, place the 4 cups of old-fashioned rolled oats. Gently pour about 1 cup of warm milk (dairy or your preferred non-dairy milk like almond, soy, or oat milk) over the oats, ensuring they are mostly covered. Let these oats sit and absorb the liquid for a full 30 minutes. After 30 minutes, the oats will have absorbed most, if not all, the liquid; draining excess is usually not necessary.
Prep and Mix Your Granola
- Preheat your oven to 350°F (175°C). As the oven warms, line a large, rimmed baking sheet with parchment paper to prevent sticking and make cleanup a breeze.
- In a large mixing bowl, combine your bloomed oats with the nuts and/or seeds, the fine-grain sea salt, and aromatic ground cinnamon. Stir everything together well, ensuring all the dry ingredients are evenly distributed.
- Next, pour in the melted coconut oil (or olive oil), maple syrup (or honey), and fragrant vanilla extract. Mix thoroughly until every single oat flake and nut is lightly coated in the golden, sticky mixture.
- Carefully pour the coated granola mixture onto your prepared baking sheet. Using a large spoon or spatula, spread it out into a single, even layer. This uniform spreading is key for even toasting.
Bake to Golden Perfection
- Slide your baking sheet into the preheated oven. Bake the granola until it’s lightly golden brown, which typically takes about 21 to 24 minutes.
- About halfway through the baking time, gently stir the granola to ensure even browning. For those coveted, substantial granola clusters, press the stirred granola down firmly with your spatula to create a more compact, even layer. The granola will continue to crisp up and firm as it cools.
Cool and Finish
- Once baked, remove the granola from the oven and let it cool completely, undisturbed, on the baking sheet for at least 45 minutes. This cooling period is absolutely vital for forming those wonderful, chewy clusters. Don't be tempted to touch it!
- Once fully cooled, sprinkle the dried fruit (like those delightful dried cranberries) and any optional mix-ins, such as chocolate chips or coconut flakes, over the granola. If you desire big chunks, break the granola into pieces with your hands. If you prefer a looser, less clumpy texture, simply stir it around with a spoon.
