Cheesy Garlic Butter Shrimp Foil Packets

Juicy shrimp steam with onion, red pepper, tomato, lime, butter, and thick mozzarella inside a sealed foil packet for a bubbling, cheesy seafood dinner.
Cook Time 15 minutes

Ingredients

  • 1 tbsp extra virgin olive oil
  • 4 white onion rings
  • 6 red bell pepper strips
  • 5 thick tomato slices
  • ¼ tsp coarse sea salt
  • 7 large raw shrimp peeled and deveined, tails on
  • Fresh lime juice
  • 14 g butter
  • 5 thick slices fresh mozzarella
  • Coarsely cracked black pepper

Method

  1. Place a large sheet of heavy-duty aluminum foil on the counter. Drizzle with 1 tbsp olive oil and spread it over the center.
  2. Layer the onion rings, red bell pepper strips, and tomato slices over the oiled foil. Sprinkle with ¼ tsp sea salt.
  3. Arrange the raw shrimp over the vegetables and squeeze fresh lime juice generously over them.
  4. Place the 14 g butter in the center, then cover the shrimp with the fresh mozzarella slices.
  5. Bring the foil edges together and tightly fold and crimp the packet closed.
  6. Place the sealed packet in a dry skillet, cover with a lid, and cook for 15 minutes.
  7. Carefully transfer the hot packet to a plate and open the foil, allowing the steam to escape.
  8. Finish the bubbling shrimp and melted mozzarella with cracked black pepper. Serve immediately with all the hot tomato-butter juices.

Notes

Open the foil carefully and away from your face because the trapped steam will be extremely hot.
