Toast the Sesame Seeds
- Start by briefly toasting about 1 tablespoon of sesame seeds in a dry pan over medium heat. Keep them moving frequently until they become fragrant and are lightly golden. This usually takes just a couple of minutes. Once toasted, immediately remove them from the pan and let them cool slightly.
Combine Ingredients
- In your food processor, add the 3/4 cup of raw cashews, 3 tablespoons of nutritional yeast, 3/4 teaspoon of sea salt, 1/4 teaspoon of garlic powder, and your cooled toasted sesame seeds.
Process
- Pulse the mixture in your food processor until you achieve a fine, crumbly texture. You want it to resemble grated parmesan cheese. It is important to be careful not to over-process the mixture, or it will quickly turn into a paste rather than a crumbly topping.
Enjoy!
- Your delicious vegan parmesan cheese is now ready. Serve it immediately or store it for later. It's great on chilaquiles, vegan pizza, breadsticks, pastas, and gratins.
Notes
Store your finished vegan parmesan in an airtight container in the refrigerator for up to 2 weeks, or freeze for up to 2 months. Always use a high-quality food processor and pulse in short bursts to prevent over-processing. Taste and adjust seasoning as needed. To achieve a chunkier texture, pulse for a shorter duration. For a cheesier flavor, add more nutritional yeast. Nutrition information is estimated based on common ingredients and serving sizes and may vary.
