Step 1: Boiling the Pasta
- Boil your chosen short pasta according to the package directions. Cook the pasta al dente to prevent it from becoming mushy. Before draining, reserve 3 tablespoons of the starchy pasta water; its starch content helps the dressing adhere to the pasta.
Step 2: Making the Dressing
- In a small bowl or a mason jar, combine the extra virgin olive oil, red wine vinegar, Dijon mustard, Italian seasoning, kosher salt, black pepper, red pepper flakes (if using), and lemon zest. Thoroughly mix these ingredients. The Dijon mustard acts as an emulsifier, binding the oil and vinegar into a cohesive, creamy dressing.
Step 3: Combining the Ingredients
- In a large bowl, add the cooked and cooled pasta, halved cherry tomatoes, diced roasted red pepper, chopped green bell pepper, sliced olives, sliced turkey pepperoni (or chickpeas), and the fresh mini mozzarella cheese balls. Pour the prepared healthy pasta salad dressing over these ingredients. Mix everything until all the pasta and vegetables are well coated.
Step 4: Chilling and Serving
- You can enjoy this pasta salad right away, but for best flavor, chill it in the refrigerator for at least 30 minutes to allow the flavors to meld. For the absolute best taste, make it the day before you plan to serve it, allowing an overnight rest to infuse every ingredient.
Notes
To prevent dryness, add extra olive oil, vinegar, or reserved pasta water before serving. Adjust salt to taste; do not overcook pasta. Store in an airtight container in the refrigerator for 3-5 days. Nutrition information is estimated based on common ingredients and serving sizes and may vary.
