Ingredients
  

  • 1 lb ground sirloin (90% lean or leaner)
  • 1 egg, slightly beaten
  • 1 clove garlic, minced
  • ½ cup Panko breadcrumbs
  • ¼ cup freshly grated Parmesan cheese
  • ½ tsp dried basil
  • ½ tsp dried parsley
  • ½ tsp salt
  • ½ tsp coarse ground black pepper
  • 2 tbsp olive oil
  • 1 28-ounce can fire roasted diced tomatoes
  • 1 cup chopped onion
  • 2 cloves garlic, chopped
  • 1/8 tsp red pepper flakes
  • ¼ tsp dried basil
  • ¼ tsp dried oregano
  • ¼ tsp dried parsley
  • 8 oz spaghetti, cooked
  • Extra grated Parmesan, for garnish (optional)

Equipment

  • Large mixing bowl
  • Broiler pan or baking sheet
  • Medium saucepan
  • Immersion blender or food processor
  • Large pot (for pasta)

Method
 

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine ground sirloin, egg, garlic, breadcrumbs, Parmesan, basil, parsley, salt, and pepper. Mix gently.
  3. Shape mixture into 12 equal meatballs. Place on lined baking sheet or broiler pan.
  4. Bake for 25–30 minutes, until cooked through and browned.
  5. Meanwhile, heat olive oil in a saucepan over medium-high heat. Sauté onion and garlic for 3–4 minutes.
  6. Stir in diced tomatoes, red pepper flakes, basil, oregano, and parsley. Simmer on low for 45 minutes, covered.
  7. Blend sauce to desired consistency using immersion blender or food processor.
  8. Cook spaghetti according to package instructions. Drain and set aside.
  9. Add baked meatballs to the sauce. Simmer together until heated through.
  10. Serve meatballs and sauce over spaghetti. Garnish with Parmesan cheese, if desired.

Notes

Use 80/20 ground beef for a richer flavor or ground turkey for a leaner option. Substitute gluten-free breadcrumbs as needed. Replace Parmesan with Pecorino Romano for a sharper taste. Crushed tomatoes work if fire-roasted aren't available. Use fresh herbs in place of dried at a 3:1 ratio.
