Step 1: Prepare the Shrimp
- Rinse the shrimp in a colander under running cold water until they are no longer rock hard, about 3 to 4 minutes.
- Very generously sprinkle the shrimp with salt and toss in the colander. Let it stand for 1 minute, then rinse well.
- Pat the shrimp dry with paper towels.
Step 2: Sauté Aromatics
- Heat a wok or large skillet over high heat.
- Add enough canola or grapeseed oil to generously coat the bottom of the pan, then add the diced sweet onion, thinly sliced garlic, and thinly sliced red hot chile.
- Sprinkle with salt and cook, stirring constantly, until the onion starts to turn translucent, about 1 to 2 minutes.
Step 3: Stir-Fry Shrimp and Asparagus
- Add the prepared shrimp to the pan and cook, stirring, until they curl more tightly and turn pink, about 1 to 2 minutes.
- Add the trimmed asparagus, soy sauce, and sugar. Cook, stirring constantly, until the asparagus is just tender, about 1 to 3 minutes.
Step 4: Finish with Butter
- Turn off the heat, add the butter, and stir until melted.
- Serve the Asparagus Stir Fry immediately for the best flavor and texture.
