30-Minute Potato Cauliflower Red Lentil Curry

Ingredients
  

  • 1 1/2 cups water
  • 2/3 cup red lentils
  • 2 tbsp avocado oil or coconut oil
  • 1 tsp whole mustard seed
  • 1 tsp whole cumin seed
  • 1 tsp whole coriander seed
  • 3 cardamom pods
  • 1/2 cup sliced shallot
  • 1 1/2 tbsp minced fresh ginger
  • 1 serrano pepper, seeded and diced (optional)
  • 2 cloves garlic, minced
  • 1 cup chopped cauliflower
  • 1 cup chopped red bell pepper
  • 1 1/2 cups peeled and chopped golden potato or sweet potato
  • 1 tsp curry powder
  • 1/4 tsp sea salt
  • 15 oz can diced tomatoes (or 3 fresh tomatoes, grated or puréed)
  • 1 1/2 cups vegetable broth
  • 2 tbsp coconut aminos (or tamari/soy sauce)
  • 1 tbsp maple syrup (or agave)
  • 1/2 cup full-fat coconut milk (or other dairy-free milk)

Method
 

  1. Bring 1½ cups of water to a boil. Add red lentils, return to gentle boil, then simmer uncovered for 7–10 minutes until tender. Drain and set aside.
  2. In a large skillet, heat oil over medium. Add mustard seeds, cumin seeds, coriander seeds, and cardamom pods. Cook for 30–60 seconds until fragrant.
  3. Add shallot, ginger, and serrano pepper. Sauté for 3 minutes until translucent.
  4. Add garlic and cook for 30 seconds more until fragrant.
  5. Add cauliflower, bell pepper, potato, curry powder, and sea salt. Stir and cook for 4 minutes.
  6. Add puréed tomatoes and vegetable broth. Bring to simmer. Cover and cook for 10 minutes until potatoes are fork-tender.
  7. Add drained lentils, coconut aminos, maple syrup, and coconut milk. Simmer a few more minutes to meld flavors.
  8. Taste and adjust seasoning with salt, maple syrup, or extra curry powder as needed.
  9. Serve hot over rice or quinoa with fresh lime and cilantro. Avoid eating whole cardamom pods.

Notes

Use red lentils for the 30-minute cooking time. Substitute other vegetables like zucchini, peas, or spinach. Adjust spice level by modifying or omitting the serrano pepper. Coconut milk gives the best creaminess, but other dairy-free milks can work. Let diners know about the whole cardamom pods before serving.
